“Un maestro mezcalero no solo nace, ta,bien se hace”
Job, hailing from the beautiful “Rancho La Pila”, dedicated his entire life to caring for livestock on the ranches. He was a full-fledged cowboy, where his spirit has always been accompanied by nature, animals and the total ecosystem. He knows the elements of the environment that surround him day by day and, in conjunction with his keen observation skills, he learned the art of maestro mezcalero from scratch. Job served as an apprentice to Ignacio Grijalva “Don Lucas”, the first responsible for the essence and flavor of our mezcals and sotoles.
Desde la raíz, that is, with the harvest or "jima" and the cultivation of the agave, Job began his journey of learning about mezcal production. He immersed himself in the process, mastering the art of fermentation and distilling. Over the years, Job has meticulously refined the flavor profiles of our mezcal varieties: cenizo, pecho, and sotol. As a result of his unwavering dedication, Job has become a linchpin in the Origen Raíz Family.
Job's story alongside Origen Raíz del Espíritu will continue, waiting for the day when someone with the fervor to learn his techniques and knowledge arrives, but above all, with the same passion and respect for the maguey that he possesses.
